The Holiday Bikini – How to Make It

WHere is a home-style take on a cocktail found on our latest drinks list. This is a party-sized premix that's loaded with flavours of the Christmas time, rendering it ideal for a holiday party. Reserve the remaining citrus syrup you can use for brunch beverages, sweets, or to mix more rounds of the drink.

The Bikini Cocktail

Makes enough for 10 people

To make the Clementine Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Directions

Making the Citrus Syrup: Combine all the items into a pan, bring to a simmer, mixing until the sugar dissolves. Then, take off the heat and leave to cool completely. Decant to a clean bottle, seal keeping it in the fridge, it will last for up to one month.

To make Batch Mix: Pour every spirits and syrup into one large bottle, allow it to infuse for an hour, then filter it , ideally through a fine cloth, making it completely strained.

For serving: Pour 85ml of the batch mix to a cocktail shaker containing ice, and stir carefully for a minute to chill. Pour into a frosted cocktail glass or equivalent, garnish with some cranberries and finish by giving it a light spray of the essential oil over the top.
